Every morning at Gemma Gelato, our day begins with the purest ingredients—farm-fresh eggs, milk, and cream. To that, we add vibrant fruits, roasted nuts, luscious chocolates, and all-natural ingredients to handcraft what we proudly call America’s finest gelato and sorbetto.
In an industry where 99% of gelato and ice cream is churned from pre-made mixes and artificial additives using the cold process method, our approach is refreshingly rare. At Gemma, we’re devoted to the “hot process” method, the gold standard used by only about 5% of gelaterias—even in Italy.
This time-honored technique involves heating ingredients to high temperatures, hydrating molecules more fully and unlocking deeper, more intense flavors. The mixture is then frozen while warm, producing smaller ice crystals that result in a dense, ultra-creamy texture with exceptional mouthfeel.
Our gelato is created using Gemma’s exclusive all-natural process—no artificial stabilizers, colors, or flavors. You won’t find hydrogenated fats, high-fructose corn syrup, palm oils, GMOs, or powdered mixes in our kitchen. It takes just 5% of the energy to recycle aluminum compared to producing it new, and the process emits virtually no CO₂. In fact, within 60 days, our containers can go from your freezer, through the recycling loop, and back to store shelves.
